Mouthwatering Gajar Ka Halwa



GaJar Ka Halwa
Serves: 6 helpings Time required: 1/2 hour.

Ingredients:
Grated carrot 1 kg (Grate it at home.. do not use readymade grated carrot... also.. if i don't have much time, I use mixie to grate them - do not add water) Milk 1 liter Whole dried milk (mawa) 200 grams Sugar 2 cups Ghee 2 tbsp. Dry fruits (sliced almond and cashew nuts, raisin ) 1/2 cup (optional) Cardamom powder 1/2 tsp. (optional)
Method:
1. Put Ghee in heavy base kadhai/deep saucepan. Add grated carrot and fry it till it turn light orange and start smelling sweet. Keep mixing it. Make sure it doesn't stick to kadhai/saucepan. 2. On another burner, bring milk to boil. Add hot milk into already cooking carrot. Cook over medium heat until all the milk gets dried up. You should stir the mixture occasionally to prevent any sticking. 3. Add sugar, cardamom powder, 1/4 cup dry fruits and continuously stir for 5-7 minutes. 4. Add mawa. Mix well. 5. Stir well and fry on low heat until ghee starts separating. 6. Decorate with remaining dry fruits and serve hot. (Optional- decorate with silver leaf)
